Fajitas? No Worries!

 

It’s a sign…  All is going to be okay.

Hi and welcome to the blog.  It’s kind of a bittersweet day.  On Tuesday night the host company ended my contract through the temp company.  No worries.  I’m eligible for unemployment.  The place where I was stationed even wrote a kind letter and left me eligible for re-assignment at the same company.  Sadly, this happened on the eve of the 6th month anniversary.  Stuff happens.

I didn’t realize how good it was to NOT quit a job. It’s the first time in 37 years I’ve been let go!

 

What helped is I saw this coming for some time.  Camping in nature has taught me to be mindful.  If a person can hear the voices of nature such as a cricket to the left, a distant cow mooing, the rustling of leaves, the creaking of tree branches and a babbling brook, he or she can easily hear and discern voices in an office environment, even when hushed.  It was probably a blessing I heard so much and could prepare myself.  The plan is to keep enjoying nature and being mindful… building awareness… and, of course fishing!

But here’s the story on the fajitas.  A lot of us had been “walking on eggshells” lately.    Things were kind of hush-hush at that job and when we saw someone absent for a few days nobody knew what was going on and many were afraid to say.  Very recently I let a handful of work friends know to look on Facebook and if they saw a picture of fajitas it meant I’d been let go, was relieved, and everything would be okay.  A lot of IMs and kind wishes came in last night after the pic was posted.

As the old boss (who was actually a sweetheart) used to say, “No worries!”  Last night I slept the best in a long time, perhaps due in part to that big ole sugary strawberry margarita.

There has been more cooking activity lately.  Chicken Marsala sounded very tasty.  The problem is that bottles of wine are too expensive.  I tried this dish the other day (using a small bottle of cheap zinfandel wine) and it was spectacular.  Basically it’s just small chicken cutlets dusted in flour, cooked a few minutes in butter and garlic and set aside.  The rest of the butter is cooked with some chicken broth, wine, and fresh mushrooms.  After it reduces, you add in half-n-half and the chicken, thickening the sauce.  I plan to cook this on a future camping trip and list the full recipe.  It would work well as a vegetarian dish, one would think..  You could use the mushrooms to hold the flour, perhaps.

Well, that’s all for now.  There is much to do and with some time off, there’s no time like the present to do some cleaning.  Actually, the time off IS a present.
